Broccoli Soup

Buy your favorite foods and snacks in smaller quantities. If you buy foods in larger portions, you are likely to eat up to 44% more. Think of those little, single serving boxes of cereal as compared to the ‘Family-Size’ box. How much cereal will you put into your bowl? If you are using the larger box, chances are that you will place multiple servings in the bowl without even realizing it.

Broccoli Soup
Ingredients:
2 tsp non-hydrogenated margarine
½ leek (white part only), finely chopped
2 stalks celery, finely chopped
4 cups fresh broccoli, including stems, chopped
3 ½ cups light chicken or vegetable broth

Preparation:
Heat margarine on medium heat in a saucepan. Gently sauté leek and celery for 3-4 min, until leek is softened. Add chopped broccoli, followed by the broth. Bring to a boil, then reduce heat, cover and simmer for 20 min, until vegetables are tender. Allow soup to cool slightly, then transfer to a blender and blend until smooth. Return soup to pot and heat gently until ready to serve. Yields 6 servings.
